Vietnamese Fresh Spring Rolls

Spring Rolls are loved by all from kids to adults but some people avoid eating them as they are deep-fried, here’s a recipe that is healthier than your regular spring roll and trust me it is quite tasty. Vietnamese fresh spring rolls can be easily prepared in 10 to 15 minutes. You just some basic ingredients fresh veggies like carrots, napa or Chinese cabbage, and cucumber and rice paper sheets and you are done. These rolls are also getting popular as rice paper rolls, salad rolls and summer rolls. Keep your bowl of shredded vegetables ready along with some rice noodles cooked. Then just soak your rice paper sheet in warm water for a few seconds and place it on the preparation board. Stuff the sheets with some noodles and veggies and gently roll them with mouth open on both sides. You can serve it with sesame dip, sweet chilli dip or peanut butter sauce.

Ingredients:

  • Rice Paper/ Rice Sheet – 2 to 3 no.
  • Cooked Rice Noodles – 1 cup
  • Shredded Carrot – 10 to 15 gm
  • Shredded Cabbage – 10 to 15 gm
  • Shredded Cucumber – 10 to 15 gm
  • Fresh Herbs [Cilantro, Mint, Thai Basil] – 1 cup
  • Coarsely Crushed Peanuts – 2 tbsp
  • Water as required

Method Of Preparing Vietnamese Fresh Spring Rolls:

Step 1. Boil rice noodles for a couple of minutes in a saucepan and strain it and keep it aside.

Step 2. Shred all the veggies and also keep them ready for stuffing.

Step 3. In a big bowl, add warm water and dip the rice paper sheet for 1 – 2 seconds until it softens. Carefully place the wrapper on a clean surface such as a cutting board or plate.

Step 4.  In the middle of the soaked rice paper sheet place shredded veggies, and cooked rice noodles leave about an inch gap between the 2 open sides so that the stuffings do not spill out. Spread crushed peanuts over them.

Step 5. Fold uncovered sides inward and then gently and tightly roll the wrap. Cut from the centre into 2 equal size pieces.

Step 6. Place the spring rolls on the serving tray and serve them with sesame oil dip, sweet chilli dip, or peanut butter dip.
